Here they are, the best Snickerdoodle Cookies around! I got these from Kristin Johns, so I cannot take credit for these amazing cookies. These are definitely a fan favorite of my friends, family, and coworkers. I brought these for a staff potluck the other day and didn't tell my coworkers and received texts of excitement! They are so simple and so delicious. Along with the simplicity, they do not take long to make or bake. If all that doesn't make you want to bake these, I don't know what else to tell you. Snickerdoodle Cookies
Prep + Cook Time: 20min. + 8 min.*

Ingredients
Cookies
1 cup unsalted butter, softened
1 & 1/2 cups granulated sugar
2 eggs
2 teaspoons pure vanilla extract
2 & 3/4 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
Sugar Coating
3 tbsp granulated sugar
1 tbsp cinnamon
Directions
Start by preheating the oven to 375 degrees fahrenheit (wow I would lose the spelling bee on this word...), prepare a parchment lined baking sheet, and make your sugar coating and set aside.
In a stand mixer with the fitted paddle, cream together butter & sugar on medium-low.
Add in your eggs and the vanilla, mix well.
In a medium bowl, whisk together the flour, baking soda, & salt. Gradually pour into the mixer, still on medium low, until mixed well. It should be smooth and shiny!
Shape dough into 1 inch balls, then roll around in your sugar mixture until well coated.
Place cookies on prepared baking sheet and bake for 7-9 minutes.***
Remove immediately from baking sheet onto a cooling rack to cool completely.

* I like to bake as I go. Meaning, I will prepare two baking sheets and cook those while I continue to roll. Then put them on a wire rack and reuse the parchment paper to bake the rest of the cookies. Therefore, your timing could be more unless you bake them all at once... like normal people do.
**Honestly, I have made these a million times and I am pretty sure I have ended up with a different amount each time. It really depends on how large or small you make your rolled dough. But what I do know is that large, medium, or small... it makes a ton.
***I have found that 8 minutes is perfect, but every oven is different. I promise you though that they do not need longer than 9 minutes. Don't feel tempted to keep baking! They are supposed to be super soft and slightly shiny, but as they cool they will turn more matte and deflate to the perfect chewy cookie!
